Vanilla Bean Sugar Cookies
Ingredients
2 ¾ cups (345g) all-purpose flour
1 tsp baking powder
½ tsp salt
1 cup (225g) unsalted butter, softened
1 ½ cups (300g) granulated sugar
1 large egg
2 tsp vanilla extract
Seeds from 1 vanilla bean (or 1 tsp vanilla bean paste)
2 tbsp milk

Instructions
Prep the dry ingredients
In a bowl, whisk together flour, baking powder, and salt.
Cream butter & sugar
In another bowl, beat butter and sugar until light and fluffy (about 2–3 minutes).
Add flavor
Mix in the egg, vanilla extract, and vanilla bean seeds until well combined.
Combine
Gradually add the dry ingredients to the wet mixture. Add milk and mix until a soft dough forms.
Chill dough
Cover and refrigerate for at least 1 hour (this helps the cookies keep their shape).
Shape cookies
Preheat oven to 180°C (350°F).
Roll dough into balls or roll out and cut shapes.
Bake
Place on a lined baking sheet and bake for 8–10 minutes until edges are lightly golden.
Cool
Let cookies cool on a rack before serving.
Tips
For extra flavor, sprinkle a little sugar on top before baking.
Don’t overbake—they should stay soft in the center.
You can frost them or keep them simple for a classic taste.
