Caramel Chocolate Chip Cheesecake

Ingredients

For the crust:
1 ½ cups chocolate cookie crumbs
5 tbsp melted butter
2 tbsp sugar

For the cheesecake filling:

500 g (about 18 oz) cream cheese, softened
¾ cup sugar
2 eggs
1 tsp vanilla extract
½ cup sour cream
¾ cup chocolate chips

For the caramel topping:

1 cup caramel sauce
2 tbsp heavy cream
Extra chocolate chips for garnish

Instructions

1. Prepare the crust
Preheat oven to 180°C (350°F).
Mix cookie crumbs, melted butter, and sugar in a bowl.

Press the mixture firmly into the bottom of a 9-inch springform pan.
Bake for 8–10 minutes, then let it cool.

2. Make the cheesecake filling
In a large bowl, beat the cream cheese and sugar until smooth.

Add eggs one at a time and mix well.
Add vanilla extract and sour cream, mixing until creamy.
Fold in the chocolate chips.

3. Bake the cheesecake
Pour the filling over the cooled crust.
Bake for 40–45 minutes until the center is slightly set.
Let the cheesecake cool completely, then refrigerate for at least 4 hours.

4. Add the topping
Warm the caramel sauce with the heavy cream and stir until smooth.
Pour over the chilled cheesecake.
Sprinkle extra chocolate chips on top.

For best flavor, chill the cheesecake overnight before serving.
