Sausage and Potato Soup
Ingredients
2 tablespoons olive oil
1 onion, finely chopped
2 cloves garlic, minced
2 sausages, sliced
3–4 medium potatoes, peeled and diced
4 cups chicken broth
1 carrot, diced (optional)
1/2 teaspoon dried thyme
1/2 teaspoon black pepper
Salt to taste
2 tablespoons fresh parsley, chopped
1/2 cup milk or cream (optional, for creamier soup)

Instructions
Heat olive oil in a large pot over medium heat.
Add the chopped onion and cook for about 3 minutes until soft.
Add garlic and sliced sausage, then cook for 3–4 minutes until the sausage is slightly browned.
Add the diced potatoes, carrot, thyme, salt, and pepper.
Pour in the chicken broth and bring the soup to a boil.
Reduce heat and simmer for 15–20 minutes, until the potatoes are tender.
Stir in the milk or cream if you want a richer soup.
Taste and adjust seasoning if needed.
Garnish with fresh parsley and serve hot.
Serve with crusty bread for a delicious meal.
