Lemon Glazed Sugar Cookies
Ingredients
For the Cookies:
1 cup (225g) unsalted butter, softened
1 cup (200g) granulated sugar
1 large egg
1 tablespoon lemon zest
2 tablespoons fresh lemon juice
2 cups (250g) all-purpose flour
½ teaspoon baking powder
¼ teaspoon salt
For the Lemon Glaze:
1½ cups (180g) powdered sugar
2–3 tablespoons fresh lemon juice
1 teaspoon lemon zest (optional, for extra flavor)

Instructions
Preheat Oven
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Cream Butter & Sugar
In a large bowl, beat the butter and sugar until light and fluffy (about 2–3 minutes).
Add Wet Ingredients
Mix in the egg, lemon zest, and lemon juice until well combined.
Combine Dry Ingredients
In a separate bowl, whisk together flour, baking powder, and salt.
Make the Dough
Gradually add the dry ingredients to the wet mixture.
Mix until a soft dough forms.
Shape Cookies
Roll dough into small balls and slightly flatten them on the prepared baking sheet.
Bake
Bake for 10–12 minutes, or until the edges are lightly golden.
Let cookies cool completely before glazing.
Make the Glaze
Whisk powdered sugar with lemon juice until smooth and thick but pourable.
Spoon or pipe the glaze in a swirl pattern on top of cooled cookies.
Sprinkle with extra lemon zest for garnish.
Let the glaze set for about 20–30 minutes before serving.
Tips
For stronger lemon flavor, add ½ teaspoon lemon extract.
Store in an airtight container for up to 4 days.
