melt in your mouth sugar cookies
Who wants a sugar cookie that melts in your mouth and has a perfect swoop of frosting? These cookies are perfect for Valentine’s Day… or any day. They’re light and soft cookies with a simple frosting. Easy to make for any special occasion!
For the cookies:
– 1/2 cup butter, room temperature
– 1 cup sugar
– 2 eggs
– 3/4 cup Greek yogurt
– 1 tsp vanilla extract
– 3 cups flour
– 1/2 tsp salt
– 3/4 tsp baking powder
– 1/2 tsp baking soda
For the frosting:
– 1/2 cup butter, room temperature
– 2 cups powdered sugar, sifted
– 2-3 tbsp cream (or milk)
– 1 tsp vanilla extract
– red food coloring (optional)

INSTRUCTIONS
For the cookies:
– Preheat the oven to 350°F.
– Cream the butter to soften. Add sugar and mix until light and fluffy. Mix in Greek yogurt, eggs, and vanilla.
– Add flour, salt, baking powder, and baking soda to the mixer and completely incorporate. Transfer dough to an airtight container and chill for at least two hours. This makes it much easier to roll out.
– Once chilled, roll out the dough on a floured surface to 1/4-inch thick. Using a 2 1/2-inch round biscuit cutter or decorative cookie cutter, cut out cookies and place them on a parchment-lined baking sheet.
– Bake in the preheated oven for 10-12 minutes. When fully baked, they should not brown, but instead, puff and become set.
– Remove from the baking sheet and cool completely before frosting.
For the frosting:
– Cream butter to soften. Add cream and vanilla extract. Mix to combine. Add the powdered sugar. Mix in slowly and then increase speed to fully incorporate and create a smooth texture.
– Add food coloring, one drop at a time, until the desired color is achieved. Mix fully after each additional drop. Spread on cooled cookies with an offset spatula.
