Roasted Cauliflower Steaks

Ingredients:

1 large cauliflower
3 tbsp olive oil
1 tsp paprika
1 tsp garlic powder
½ tsp turmeric (optional)
Salt and black pepper to taste
2 tbsp lemon juice
Fresh parsley for garnish

For the Sauce (optional):

3 tbsp Greek yogurt or mayonnaise
1 tbsp lemon juice
1 tbsp olive oil
1 tsp honey
1 tsp chili sauce or hot sauce
Salt & pepper

Instructions:

1. Prepare the Cauliflower
Remove the leaves and trim the stem but keep the core intact.
Slice the cauliflower into 1-inch thick steaks (usually 3–4 steaks per cauliflower).

2. Season the Steaks
In a small bowl, mix olive oil, paprika, garlic powder, turmeric, salt, pepper, and lemon juice.
Brush both sides of the cauliflower steaks generously with the mixture.

3. Roast
Preheat the oven to 220°C (425°F).
Place steaks on a baking sheet lined with parchment paper.
Roast for 20–25 minutes, flipping halfway, until golden and slightly charred on the edges.

4. Make the Sauce
Whisk together yogurt/mayo, lemon juice, olive oil, honey, chili sauce, salt, and pepper.

5. Serve
Drizzle the sauce over the roasted cauliflower or serve it on the side.
Garnish with freshly chopped parsley.

Tips:
For extra flavor, add cumin or curry powder to the seasoning.
You can also grill the cauliflower instead of roasting.
