Pizza Stuffed Baked Potatoes
Ingredients (4 servings)
4 large potatoes (russet or baking potatoes)
1 cup mozzarella cheese, shredded
½ cup pizza sauce or tomato sauce
½ cup pepperoni slices (or sausage, turkey pepperoni, or beef)
¼ cup sliced bell peppers (any color)
¼ cup sliced black olives
2 tablespoons chopped onion (optional)
Olive oil
Salt & black pepper
Dried oregano or Italian seasoning
Fresh parsley or basil (for garnish)

Instructions
Bake the Potatoes
Preheat oven to 200°C (400°F).
Wash and dry the potatoes.
Rub lightly with olive oil and sprinkle with salt.
Place directly on the oven rack and bake for 45–60 minutes until tender.
Prepare the Potatoes
Let potatoes cool slightly.
Cut a slit lengthwise on each potato and gently open.
Scoop out a little of the inside (optional) to make room for filling.
Add Pizza Filling
Spoon pizza sauce inside each potato.
Add cheese, pepperoni, bell peppers, olives, and onion.
Sprinkle with oregano and black pepper.
Bake Again
Return potatoes to the oven.
Bake for 10–15 minutes until cheese is melted and bubbly.
Serve
Garnish with fresh parsley or basil.
Serve hot.
Tips
You can add mushrooms, corn, or jalapeños.
For extra flavor, mix a little butter into the potato flesh before filling.
Works great in an air fryer too (final bake: 5–7 minutes).
