Chocolate Caramel Peanut Bars

Ingredients

Peanut Base
2 cups roasted peanuts (unsalted or lightly salted)
½ cup crushed digestive biscuits or graham crackers
¼ cup melted butter
Caramel Layer
1 cup granulated sugar
6 tbsp butter
½ cup heavy cream
½ tsp salt
1 tsp vanilla extract
Chocolate Topping
1½ cups milk chocolate (chopped or chips)
1 tbsp vegetable oil (optional, for shine)
Optional
Flaky sea salt for topping

Instructions

Prepare the Base
Line a square pan with parchment paper.
Mix peanuts, crushed biscuits, and melted butter.

Press firmly into the pan and refrigerate.
Make the Caramel
Heat sugar in a saucepan over medium heat until melted and golden.
Add butter and stir well.

Slowly add cream (be careful, it will bubble).
Stir in salt and vanilla.

Pour caramel evenly over the peanut base.
Refrigerate for 30 minutes until set.
Add Chocolate Layer
Melt chocolate with oil using a double boiler or microwave.
Pour over the caramel layer and spread evenly.

Sprinkle flaky salt on top if desired.
Chill & Cut
Refrigerate for at least 1 hour.
Cut into small squares using a sharp knife.

Tips
For cleaner cuts, warm the knife slightly.
You can use dark chocolate if you prefer less sweetness.
Store in the fridge for up to 1 week.
