Red Velvet Chocolate Sandwich Cookies

Ingredients

For the Cookies

1 ½ cups all-purpose flour
¼ cup cocoa powder
½ tsp baking soda
¼ tsp salt
½ cup unsalted butter, softened
¾ cup brown sugar
¼ cup granulated sugar
1 large egg
1 tbsp milk
1 tsp vanilla extract
1 tsp red food coloring

For the Cream Cheese Filling

8 oz (225 g) cream cheese, softened
¼ cup powdered sugar
½ tsp vanilla extract

For the Topping

Chocolate spread (Nutella or chocolate ganache)
Small pieces of red velvet cake or cheesecake (optional, for decoration)

Instructions

1. Make the Cookies
Preheat oven to 175°C (350°F).
In a bowl, whisk flour, cocoa powder, baking soda, and salt.

In another bowl, beat butter, brown sugar, and granulated sugar until creamy.
Add egg, milk, vanilla, and red food coloring. Mix well.

Gradually add dry ingredients and mix until a soft dough forms.

Scoop dough into balls and place on a lined baking tray.
Flatten slightly and bake for 10–12 minutes.
Let cookies cool completely.

2. Prepare the Filling
Beat cream cheese, powdered sugar, and vanilla until smooth.

Transfer to a piping bag or use a spoon.
3. Assemble
Pipe or spread cream cheese filling on the bottom of one cookie.

Top with another cookie to form a sandwich.

Spread chocolate spread on top.
Garnish with small cake or cheesecake pieces if desired.

Tips
Chill cookies for 15 minutes before filling for cleaner layers.
Store in the fridge if using cream cheese filling.
Best enjoyed slightly chilled or at room temperature.
