Brookies Recipe (Brownie Cookie Bars)
Ingredients
Brownie Layer
½ cup (115 g) unsalted butter, melted
1 cup (200 g) granulated sugar
2 large eggs
1 tsp vanilla extract
⅓ cup (40 g) unsweetened cocoa powder
½ cup (65 g) all-purpose flour
¼ tsp salt
¼ tsp baking powder
Cookie Dough Layer
½ cup (115 g) unsalted butter, softened
½ cup (100 g) brown sugar
¼ cup (50 g) granulated sugar
1 large egg
1 tsp vanilla extract
1½ cups (190 g) all-purpose flour
½ tsp baking soda
¼ tsp salt
¾ cup (130 g) chocolate chips

Instructions
Preheat oven to 350°F (180°C).
Line an 8×8 inch (20×20 cm) baking pan with parchment paper.
Make the brownie layer:
Mix melted butter and sugar.
Add eggs and vanilla, mix well.
Stir in cocoa powder, flour, salt, and baking powder.
Pour batter into the pan and spread evenly.
Make the cookie layer:
Cream butter with brown and white sugar.
Add egg and vanilla.
Mix in flour, baking soda, and salt.
Fold in chocolate chips.
Assemble:
Drop spoonfuls of cookie dough over the brownie layer.
Gently spread (it doesn’t need to be perfect).
Bake for 30–35 minutes, until the top is golden and a toothpick comes out with a few moist crumbs.
Cool completely, then cut into squares.
Tips
For extra gooey bars, slightly underbake.
Chill before cutting for clean layers.
Serve warm with ice cream for a dessert upgrade.
