Chocolate Cherry Bonbons

Ingredients

Cherry Center
¾ cup cherry jam or cherry compote
1 tsp lemon juice
1 tsp cornstarch (optional, for thicker center)
Chocolate Filling
1 cup milk chocolate, melted
¼ cup heavy cream
2 tbsp butter, softened
2 tbsp cocoa powder (optional, for richer flavor)
Chocolate Coating
2 cups milk or dark chocolate, melted and tempered
Decoration (optional)
Melted chocolate for drizzling

Instructions

1. Prepare the Cherry Center
Heat the cherry jam with lemon juice over low heat.
If needed, mix cornstarch with 1 tbsp water and stir into the jam.

Cook until thick, then cool completely.
Spoon small dollops onto parchment paper and freeze for 30–40 minutes.

2. Make the Chocolate Filling
Heat the cream until warm (not boiling).
Stir into melted chocolate.
Add butter and cocoa powder; mix until smooth.
Let it cool slightly until thick but pipeable.

3. Assemble the Bonbons
Pipe a small amount of chocolate filling into a silicone mold.
Place a frozen cherry center in the middle.
Cover with more chocolate filling and smooth the top.
Freeze for 20 minutes until firm.

4. Coat with Chocolate
Remove bonbons from molds.
Dip each piece into tempered chocolate.
Place on parchment paper.
Drizzle with melted chocolate if desired.

5. Set & Serve
Let the bonbons set at room temperature or refrigerate briefly.
Store in an airtight container in the fridge.

Tips
You can use raspberry or strawberry jam instead of cherry.
Dark chocolate gives a richer, less sweet result.
Perfect for gifts or dessert trays.
