Caramel Cheesecake Bites
Ingredients
Cheesecake Filling
8 oz (225 g) cream cheese, softened
1/4 cup powdered sugar
1/2 teaspoon vanilla extract
Coating
1 cup white chocolate, melted
1/2 cup crushed biscuits or graham crackers
Topping
Caramel sauce
Crushed biscuits (optional)

Instructions
Make the Filling
In a bowl, beat the cream cheese, powdered sugar, and vanilla until smooth and creamy.
Shape the Bites
Scoop small portions (about 1 tablespoon each) and roll into balls.
Place on a tray lined with parchment paper.
Freeze
Freeze for 30–45 minutes until firm.
Coat with White Chocolate.
Dip each cheesecake ball into melted white chocolate, letting excess drip off.
Add Crumb Base.
Roll the bottom of each ball in crushed
biscuits while the chocolate is still wet.
Set
Place back on parchment paper and refrigerate until the coating is set.
Decorate
Drizzle caramel sauce over the top and sprinkle with more biscuit crumbs.

Serve chilled
Store in the refrigerator for up to 3 days
You can substitute caramel with chocolate or salted caramel sauce.
