Chocolate Lava Cookies

Chocolate Lava Cookies

Ingredients (8–10 cookies)

1/2 cup (115 g) unsalted butter
1 cup (170 g) dark chocolate (chips or chopped)
1/2 cup (100 g) granulated sugar
1/4 cup (50 g) brown sugar
1 large egg
1 tsp vanilla extract
1 cup (125 g) all-purpose flour
1/4 cup (25 g) cocoa powder
1/2 tsp baking powder
1/4 tsp salt
Extra chocolate squares or chocolate spread (for the lava center)

Instructions

Melt butter and chocolate together using a microwave or double boiler. Stir until smooth. Let it cool slightly.
Add sugars to the melted chocolate and mix well.

Add egg and vanilla, whisk until smooth.
In a separate bowl, mix flour, cocoa powder, baking powder, and salt.

Gradually combine dry ingredients with the chocolate mixture to form a soft dough.
Chill the dough for 20–30 minutes (important for shaping).

Take a spoon of dough, flatten it, place a piece of chocolate in the center, and cover with more dough. Seal well and roll into a ball.

Place on a baking tray lined with parchment paper.

Bake at 180°C (350°F) for 9–11 minutes.
The outside should be set, but the inside still soft.
Let rest for 2 minutes, then serve warm.

Tips

Do not overbake, or the lava center will disappear.
Best served warm with milk or vanilla ice cream.
You can use Nutella or chocolate ganache as the filling.
