Chocolate Chip Cheesecake Cookies
Ingredients
For the cookie dough:
1 cup (225 g) unsalted butter, softened
¾ cup granulated sugar
¾ cup brown sugar
2 large eggs
1 tsp vanilla extract
2½ cups all-purpose flour
1 tsp baking soda
½ tsp salt
1½ cups chocolate chips
For the cheesecake filling:
8 oz (225 g) cream cheese, softened
¼ cup powdered sugar
½ tsp vanilla extract

Instructions
1. Prepare the cheesecake filling
In a bowl, mix cream cheese, powdered sugar, and vanilla until smooth.
Scoop small teaspoon-sized balls and place them on a plate.
Freeze for 20–30 minutes until firm.
2. Make the cookie dough
Cream butter, granulated sugar, and brown sugar until light and fluffy.
Add eggs and vanilla; mix well.
In another bowl, whisk flour, baking soda, and salt.
Gradually mix dry ingredients into the wet mixture.
Fold in chocolate chips.
3. Assemble the cookies
Scoop cookie dough and flatten slightly in your hand.
Place a frozen cheesecake ball in the center.
Wrap the dough around it, sealing completely.
4. Bake
Preheat oven to 350°F (180°C).
Place cookies on a lined baking sheet, spaced apart.
Bake for 12–15 minutes, until edges are lightly golden.
5. Cool & enjoy
Let cookies cool for 10 minutes before serving for the best creamy center.
Tips
Chill cookie dough for thicker cookies.
Add mini chocolate chips for better distribution.
Sprinkle flaky sea salt on top before baking for extra flavor.
