Orange Almond Cake

Ingredients

For the Cake Layers

1 ½ cups all-purpose flour

1 cup sugar

½ cup vegetable oil or melted butter

3 large eggs

1 tbsp orange zest

½ cup fresh orange juice

1 tbsp baking powder

1 tsp vanilla extract

Pinch of salt

For the Cream Filling

2 cups heavy whipping cream (cold)

4 tbsp powdered sugar

1 tsp vanilla extract

For the Orange Glaze (Mirror Top)

1 cup fresh orange juice

3 tbsp sugar

1 tbsp cornstarch

1 tsp lemon juice

For Decoration

Sliced almonds (roasted)

Orange slices (fresh or dried)

Whipped cream swirls

Instructions

1. Make the Cake

1. Preheat oven to 180°C (350°F).

2. In a bowl, whisk eggs and sugar until light and fluffy.

3. Add oil, orange juice, orange zest, and vanilla; whisk again.

4. Sift in flour, baking powder, and salt. Mix gently.

5. Pour batter into a round cake pan lined with parchment paper.

6. Bake for 25–30 minutes or until a toothpick comes out clean.

7. Let the cake cool completely.

2. Prepare the Cream

1. Whip cold heavy cream with powdered sugar and vanilla until stiff peaks form.

2. Keep chilled.

3. Orange Glaze

1. Mix orange juice, sugar, and cornstarch in a small pot.

2. Cook over medium heat while stirring until thick and glossy.

3. Add lemon juice and let it cool to room temperature.

4. Assemble the Cake

1. Cut the cake into 2 layers.

2. Spread whipped cream between the layers.

3. Frost the outside of the cake with whipped cream.

4. Gently press sliced almonds around the sides.

5. Pour the cooled orange glaze on top.

6. Decorate with whipped cream swirls and orange slices.
