Potato & Sausage Soup

Ingredients:

4 medium potatoes, peeled and diced

2 cups smoked sausage, sliced

1 onion, chopped

2 garlic cloves, minced

1 tablespoon butter or oil

1–2 celery stalks, chopped (optional)

1 carrot, chopped (optional)

4 cups chicken broth

1 cup water

1 teaspoon black pepper

1 teaspoon paprika

1 teaspoon dried oregano

Salt to taste

Fresh parsley for garnish

Instructions:

1. Sauté the sausage

Heat butter or oil in a pot.

Add the sliced sausage and cook for 3–4 minutes until lightly browned.

Remove sausage and set aside.

2. Cook the vegetables

In the same pot, add onion and garlic.

Sauté for 2 minutes until soft.

Add celery and carrot (if using) and cook 3 more minutes.

3. Add potatoes & broth

Add diced potatoes, chicken broth, and water.

Season with pepper, paprika, oregano, and salt.

Bring to a boil.

4. Simmer

Reduce heat and let it simmer for 15–20 minutes until potatoes are tender.

5. Add sausage

Return the browned sausage to the pot.

Let it cook for 5 more minutes to blend flavors.

6. Serve

Garnish with chopped fresh parsley.

Serve hot with bread.
