Classic Cobb Salad with Chicken & Bacon
Ingredients (4 servings)
For the salad:
2 cups cooked chicken breast, diced or sliced
4 slices cooked bacon, crumbled
2 hard-boiled eggs, sliced
1 large avocado, diced
1 cup cherry tomatoes, halved
1 cup cucumber, diced (optional but nice!)
½ cup blue cheese or feta, crumbled
4 cups romaine lettuce, chopped
½ red onion, thinly sliced (optional)
For the dressing (classic Cobb vinaigrette):
3 tbsp red wine vinegar
1 tbsp Dijon mustard
1 small garlic clove, minced
1 tsp honey
⅓ cup olive oil
Salt and black pepper, to taste

Instructions
1. Prepare ingredients
Grill or pan-sear your chicken until fully cooked, then slice or dice.
Cook bacon until crispy, then crumble.
Boil eggs (10 minutes), peel, slice.
Chop lettuce and prepare all veggies.
2. Make the dressing
In a small bowl, whisk together vinegar, Dijon mustard, garlic, honey, salt, and pepper.
Slowly whisk in olive oil until the dressing becomes smooth.
3. Assemble the salad
On a large platter or bowl, add the bed of lettuce.
Arrange chicken, bacon, eggs, tomatoes, avocado, cucumber, onion, and cheese in neat rows (classic Cobb style).
4. Serve
Drizzle with dressing just before serving, or serve it on the side.
Tips
Substitute blue cheese with feta if you prefer a milder taste.
Add grilled corn for extra sweetness.
Use turkey bacon for a lighter version.
