Savory Broccoli, Carrot & Mushroom Medley
Ingredients (2–3 servings):
2 cups broccoli florets
1 cup carrots, thinly sliced
1 cup mushrooms, sliced
2 tbsp olive oil or butter
2 cloves garlic, minced
1 small onion, finely chopped (optional but recommended)
½ tsp paprika
½ tsp dried thyme or oregano
Salt & black pepper to taste
2 tbsp soy sauce or 1 tbsp lemon juice (choose your flavor)
Optional: 1–2 tbsp grated Parmesan, sesame seeds, or chopped parsley

Instructions:
1. Prepare the vegetables
Wash and slice everything. Keep the broccoli in medium pieces so it cooks evenly.
2. Sauté the aromatics
Heat olive oil or butter in a pan.
Add garlic and onion, sauté 1 minute until fragrant.
3. Cook the vegetables
Add carrots first and sauté for 3 minutes.
Add broccoli and mushrooms. Stir well.
4. Season
Sprinkle paprika, thyme/oregano, salt, and black pepper.
Mix and cook for 5–7 minutes until veggies are tender but still crisp.
5. Add finishing flavor
Add soy sauce OR lemon juice and stir for 1 minute.
6. Serve
Top with Parmesan, sesame seeds, or parsley if desired.
Serving Ideas
Serve as a side dish with chicken, steak, or fish.
Toss with cooked pasta for a quick veggie pasta.
Add to rice or quinoa bowls.
