Creamy Chicken Pasta Bake
Ingredients:
2 chicken breasts, cut into cubes
2 cups penne pasta
2 tbsp olive oil
2 cloves garlic, minced
1 small onion, chopped
1 cup diced tomatoes (fresh or canned)
1 cup heavy cream
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
1 tsp Italian seasoning (or mix of basil, oregano, thyme)
Salt and black pepper, to taste
1 tbsp chopped parsley (optional, for garnish)

Instructions:
1. Cook the Pasta:
Boil water in a large pot with a pinch of salt. Add the penne pasta and cook until al dente. Drain and set aside.
2. Cook the Chicken:
In a large skillet, heat olive oil over medium heat. Add the chicken cubes and season with salt, pepper, and Italian seasoning. Cook until golden brown and fully cooked. Remove and set aside.
3. Make the Sauce:
In the same skillet, add a little more oil if needed, then sauté garlic and onion until soft. Add diced tomatoes and cook for 2–3 minutes. Pour in the heavy cream, stir well, and let it simmer for 3–4 minutes.
4. Combine:
Add the cooked pasta and chicken to the sauce. Mix well until everything is coated evenly.
5. Bake:
Transfer the mixture to a baking dish. Top with mozzarella and Parmesan cheese. Bake in a preheated oven at 375°F (190°C) for about 15 minutes, or until the cheese is melted and bubbly.
6. Serve:
Garnish with chopped parsley and serve hot.
