Grilled Chicken Salad

Grilled Chicken Salad with Pineapple and Avocado

Ingredients:

2 boneless, skinless chicken breasts

1 tbsp olive oil

Salt and black pepper (to taste)

1 tsp garlic powder

1 tsp paprika

2 cups mixed greens (lettuce, spinach, or arugula)

1 cup fresh pineapple chunks

1 avocado, sliced

1 tomato, diced

1/4 red onion, thinly sliced

Fresh parsley or cilantro, chopped (for garnish)

For the Dressing:

2 tbsp olive oil

1 tbsp honey

1 tbsp Dijon mustard

1 tbsp lemon juice (or lime juice)

Salt and pepper to taste

Instructions:

1. Prepare the Chicken:

Rub the chicken breasts with olive oil, garlic powder, paprika, salt, and pepper.

Grill or pan-sear over medium heat for 5–6 minutes per side, until fully cooked and slightly charred.

Let it rest for a few minutes, then cut into cubes or slices.

2. Assemble the Salad:

In a large bowl or plate, add the mixed greens.

Top with grilled chicken, pineapple chunks, avocado slices, diced tomato, and red onion.

3. Make the Dressing:

In a small bowl, whisk together olive oil, honey, Dijon mustard, lemon juice, salt, and pepper until smooth.

4. Serve:

Drizzle the dressing over the salad.

Garnish with fresh parsley or cilantro.

Serve immediately and enjoy!
