Chocolate Cheesecake Cupcakes

Ingredients:

For the chocolate cupcake batter:

1 cup all-purpose flour

½ cup unsweetened cocoa powder

¾ cup sugar

1 tsp baking soda

½ tsp baking powder

¼ tsp salt

1 large egg

½ cup milk

¼ cup vegetable oil

½ cup hot water

1 tsp vanilla extract

For the cheesecake filling:

200 g (about 7 oz) cream cheese, softened

¼ cup sugar

1 egg

½ tsp vanilla extract

For the chocolate ganache topping:

150 g (5 oz) dark chocolate, chopped

½ cup heavy cream

Chocolate chunks or chips for decoration

Instructions:

1. Preheat the oven to 175°C (350°F). Line a muffin tray with cupcake liners.

2. Prepare the chocolate batter:

In a large bowl, whisk together flour, cocoa, sugar, baking soda, baking powder, and salt.

Add egg, milk, oil, and vanilla. Mix until smooth.

Slowly stir in the hot water until the batter is thin and smooth.

3. Prepare the cheesecake filling:

Beat the cream cheese with sugar until creamy.

Add egg and vanilla, and mix until smooth.

4. Assemble the cupcakes:

Fill each cupcake liner halfway with chocolate batter.

Add a spoonful of cheesecake mixture in the center.

Cover lightly with more chocolate batter.

5. Bake for 18–22 minutes, or until a toothpick inserted comes out clean.

Let cool completely.

6. Make the ganache:

Heat the cream until hot (but not boiling).

Pour over the chopped chocolate and stir until smooth and glossy.

Let it cool slightly before spreading over cupcakes.

7. Decorate with chocolate cubes or chips on top.
