Chicken and Potato Bake

Serves: 4
Ingredients:
2 large chicken breasts (cut into bite-sized pieces)
4 medium potatoes (peeled and thinly sliced)
1 small onion (sliced)
2 cloves garlic (minced)
1 cup shredded cheese (mozzarella or cheddar)
1 cup heavy cream (or milk + 1 tbsp flour)
2 tbsp olive oil or butter
1 tsp paprika
½ tsp black pepper
1 tsp salt
½ tsp dried thyme or oregano
Optional: chopped parsley for garnish

Instructions:
1. Preheat oven to 200°C (400°F).
2. Prepare the potatoes: Peel and slice them thinly, about ⅛ inch thick.
3. Cook the chicken:
Heat olive oil in a pan.
Add chicken, garlic, salt, pepper, and paprika.
Cook for about 5–6 minutes, until lightly browned.
4. Assemble the bake:
Grease a baking dish with butter or oil.
Layer half of the potatoes on the bottom.
Add cooked chicken and onion slices.
Pour half of the cream over the layer.
Add the rest of the potatoes and pour the remaining cream.
5. Top with cheese and sprinkle herbs (thyme or oregano).
6. Bake uncovered for 40–45 minutes, until the top is golden and the potatoes are tender.
7. Garnish with fresh parsley and serve hot.
