Roasted Chicken Drumsticks

Ingredients (4 servings):

8 chicken drumsticks

3 tbsp olive oil

2 tbsp soy sauce (optional, for deeper flavor)

1 tbsp lemon juice or vinegar

4 garlic cloves, minced

1 tsp smoked paprika (or regular paprika)

1 tsp onion powder

1 tsp dried oregano (or thyme/rosemary)

½ tsp chili powder (optional, for spice)

Salt & black pepper, to taste

Instructions:

1. Preheat oven to 200°C (400°F). Line a baking tray with parchment paper or foil.

2. Prepare the marinade: In a large bowl, whisk olive oil, soy sauce, lemon juice, garlic, paprika, onion powder, oregano, chili powder, salt, and pepper.

3. Marinate chicken: Add drumsticks, coat well, and let marinate for at least 30 minutes (or up to overnight in the fridge for best flavor).

4. Arrange on tray: Place drumsticks on the baking sheet in a single layer.

5. Roast: Bake for 35–40 minutes, flipping halfway through, until chicken is golden brown and reaches an internal temp of 75°C (165°F).

6. Optional crisp: For extra crispy skin, broil/grill on high for the last 3–5 minutes.

Serving ideas:

Serve with roasted potatoes, rice, or a fresh green salad.

Brush with BBQ sauce or honey at the end for a sweet glaze.
