Chicken and Peppers with Cheese

Baked Chicken and Peppers with Cheese

Ingredients:

4 boneless chicken breasts (or thighs)

2 bell peppers (red, green, or yellow), sliced into strips

1 medium onion, sliced

2 tbsp olive oil

2 cloves garlic, minced

1 tsp paprika

1 tsp dried oregano (or Italian seasoning)

Salt and black pepper to taste

1 cup shredded mozzarella (or cheddar, provolone, or a mix)

½ cup grated Parmesan cheese

Fresh parsley for garnish

Instructions:

1. Preheat oven to 190°C (375°F).

2. Season the chicken with salt, pepper, paprika, and oregano.

3. In a skillet, heat olive oil, then sear chicken on both sides for 2–3 minutes (not fully cooked, just golden). Remove and set aside.

4. In the same skillet, sauté the onions, peppers, and garlic for 3–4 minutes until slightly softened.

5. Place chicken breasts in a baking dish, then top with the pepper-onion mixture.

6. Sprinkle mozzarella and Parmesan cheese generously over the top.

7. Bake uncovered for 20–25 minutes, until the chicken is fully cooked (internal temp 75°C / 165°F) and cheese is melted and bubbly.

8. Garnish with fresh parsley and serve hot.

Serving Ideas:

Serve with rice, pasta, or crusty bread.

Add a side salad for a lighter meal.
