White Strawberry Cake Recipe
Ingredients
For the Cake:
2 ½ cups cake flour (or all-purpose flour sifted)
2 ½ tsp baking powder
½ tsp salt
¾ cup unsalted butter (softened)
1 ¾ cups granulated sugar
5 large egg whites (room temp)
1 tsp vanilla extract
½ tsp almond extract (optional, for a delicate flavor)
1 cup whole milk (room temp)
1 cup fresh strawberries (finely chopped or pureed)
For the Strawberry Filling:
1 cup fresh strawberries (diced)
2 tbsp sugar
1 tsp lemon juice
For the White Strawberry Frosting:
1 cup unsalted butter (softened)
4 cups powdered sugar
½ cup strawberry puree (strained to remove seeds)
1 tsp vanilla extract
1–2 tbsp heavy cream (as needed for texture)

Instructions
1. Make the Cake:
1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
2. Whisk together flour, baking powder, and salt. Set aside.
3. In a large bowl, cream butter and sugar until fluffy.
4. Add egg whites, one at a time, beating well after each. Mix in vanilla (and almond extract if using).
5. Alternate adding flour mixture and milk, beginning and ending with flour. Mix just until combined.
6. Fold in chopped or pureed strawberries gently.
7. Divide batter evenly into pans and bake 25–30 minutes, until a toothpick comes out clean.
8. Let cool completely before assembling.
2. Prepare the Filling:
1. In a small saucepan, cook diced strawberries, sugar, and lemon juice over medium heat until slightly thickened (about 5–7 minutes).
2. Cool completely.
3. Make the Frosting:
1. Beat butter until creamy.
2. Gradually add powdered sugar.
3. Mix in strawberry puree and vanilla.
4. Add cream a little at a time until fluffy and spreadable.
4. Assemble the Cake:
1. Place one cake layer on a plate. Spread with strawberry filling.
2. Add second cake layer. Frost with strawberry frosting.
3. Decorate with fresh strawberries or white chocolate shavings.
Result: A fluffy white cake with sweet strawberry flavor and a creamy pink frosting – perfect for birthdays, spring parties, or a romantic dessert!
