Chocolate Strawberry Cheesecake Bars
Ingredients
For the crust:
2 cups Oreo cookie crumbs (about 24 cookies, crushed)
6 tbsp unsalted butter, melted
For the cheesecake filling:
16 oz (450 g) cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/2 cup sour cream (or Greek yogurt for lighter version)
For the strawberry layer:
1 1/2 cups fresh strawberries, sliced
For the chocolate ganache topping:
1 cup semi-sweet chocolate chips
1/2 cup heavy cream
For garnish:
Fresh strawberries and blackberries
Shaved dark chocolate (optional)

Instructions
Prepare the crust
Preheat oven to 325°F (160°C).
Mix Oreo crumbs with melted butter until well combined.
Press mixture firmly into a parchment-lined 9×9-inch baking pan.
Bake for 10 minutes, then let cool.
Make the cheesecake layer
In a large bowl, beat cream cheese and sugar until smooth.
Add eggs one at a time, mixing well after each.
Mix in vanilla and sour cream until creamy.
Pour over the cooled crust and spread evenly.
Bake the cheesecake
Bake at 325°F (160°C) for 30–35 minutes until edges are set but center is slightly jiggly.
Let cool completely, then refrigerate for at least 4 hours (or overnight).
Add strawberries
Arrange sliced strawberries evenly on top of the chilled cheesecake layer.
Make chocolate ganache
Heat cream in a saucepan until just simmering.
Pour over chocolate chips in a bowl and let sit for 2 minutes.
Stir until smooth and glossy.
Assemble
Pour ganache over strawberries, letting it drip down the sides.
Refrigerate 30 minutes until ganache sets.
Garnish & Serve
Top with fresh strawberries, blackberries, and chocolate shavings.
Slice into bars and serve chilled.
