DELICIOUS CROISSANTS

EASY AND DELICIOUS CROISSANTS

Ingredients:

500g all-purpose flour (000 or strong if you have it)
70g sugar
10g salt
10g dried yeast (or 25g fresh yeast)
1 egg
250ml warm milk
50g softened butter
150g cold butter (for rolling)
1 egg yolk + 2 tbsp milk (for brushing)

Step by step:

Prepare the dough
In a bowl, mix the flour, sugar, and salt. Add the yeast, egg, warm milk, and 50g of softened butter. Knead until you have a soft, even dough. Cover with plastic wrap and let it rest for 1 hour, until it has doubled in size.

First roll out
Roll out the dough into a rectangle. Place the cold butter in the center (in a block), fold the ends like an envelope, and roll out with a rolling pin.  Make a third fold (as if folding a letter). Refrigerate for 30 minutes.

Rolling
Repeat the rolling and folding process two more times, always resting for 30 minutes in the refrigerator between each fold. This will form the layers.

Shaping
Roll the dough into a long rectangle and cut triangles. Roll from the base to the tip to form the croissants. Place them on a greased baking sheet.

Final Proofing
Let the croissants rest, covered, for 1 hour or until they rise and are very fluffy.

Baking
Brush with the egg yolk and milk mixture. Bake in a preheated oven at 180°C for 20-25 minutes, until golden brown.
And that’s it! You’ll have tender, fluffy, and golden croissants like the ones in the photo.

They can be filled with dulce de leche, pastry cream, chocolate, or enjoyed plain.
