Peppermint Ice Cream Cake
Cool mint + rich chocolate + crunchy layers = the ultimate frozen treat!It’s like peppermint bark and ice cream had a beautiful baby.
Ingredients:
Base layer:
• 20 chocolate sandwich cookies (like Oreos), crushed
• 1/4 cup (60g) melted butter
Middle layer:
• 1.5 quarts (1.5L) peppermint ice cream, slightly softened (Or use vanilla ice cream with peppermint extract + crushed candy canes)
Top layer:
• 1 cup (240ml) heavy whipping cream
• 2 tbsp powdered sugar
• 1/2 tsp peppermint extract
• Crushed candy canes or peppermint candies for topping
• Optional: chocolate ganache drizzle

Instructions:
1 Crust time!Mix crushed cookies and melted butter in a bowl. Press into the bottom of a springform pan or loaf pan. Freeze for 15 minutes.
2 Ice cream layer!Spread softened peppermint ice cream over the crust. Smooth the top. Cover and freeze for 3–4 hours or until firm.
3 Whipped topping!Whip heavy cream, powdered sugar, and peppermint extract until stiff peaks form. Spread over frozen ice cream layer.
4 Decorate like a winter wonderland!Sprinkle crushed candy canes on top. Drizzle with chocolate ganache if you’re feeling fancy.
5 Freeze for at least 1 more hour before slicing. Use a warm knife for clean cuts.
