Vanilla ice cream with pumpkin seed oil is my new favorite combination! Sweet and crispy with the wonderful pumpkin seed flavor, this creation is guaranteed to blow you away. With just a few steps, you can now easily make this dessert yourself.
INGREDIENTS (Serves 2)
FOR THE PUMPKIN CARAMEL
2 tbsp sugar
2 tbsp pumpkin seeds
1 pinch of salt
FOR THE ICE CREAM
4-6 scoops vanilla ice cream
2 tsp pumpkin seed oil

PREPARATION
Step 1
For the pumpkin seed brittle, heat the sugar in a pan and melt without stirring. Once the sugar is completely melted, add the pumpkin seeds and salt and stir gently.
Pour the caramel mixture onto a baking sheet (careful, it’s very hot!) and let it cool completely.
Step 2
Once the brittle is cold, chop it into small pieces with a sharp knife. Remove the ice cream from the freezer and place two to three scoops into two bowls.
Drizzle each with a teaspoon of pumpkin seed oil and spread the brittle on top. Enjoy your vanilla ice cream with pumpkin seed oil immediately.
