Exotic Mango Berry Cheesecake
Ingrédients:
– 2 cups graham cracker crumbs
– 1/2 cup unsalted butter, melted
– 16 oz cream cheese, softened
– 1 cup sugar
– 1 tsp vanilla extract
– 2 cups mango puree
– 1 tbsp gelatin
– 1 cup mixed berries (raspberries, blackberries)
– fresh mint leaves for garnish

Instructions:
1. mix graham cracker crumbs and butter, press into a springform pan.
2. beat cream cheese, sugar, and vanilla extract until smooth.
3. spread cream cheese mixture over crust, refrigerate for 1 hour.
4. dissolve gelatin in warm mango puree, pour over cream cheese layer.
5. refrigerate for 4 hours until set.
6. top with mixed berries and mint leaves before serving.
