Chicken Parmesan Fillet
Ingredients:
For the fillets:
4 chicken breast fillets
Salt and black pepper to taste
Crushed garlic (optional)
Juice of 1 lemon
2 beaten eggs
1 cup all-purpose flour
1 cup breadcrumbs
Oil for frying
For the sauce:
1 tablespoon olive oil
1 clove garlic, minced
1/2 onion, minced
1 can tomato sauce (or 2 cups homemade sauce)
Salt, oregano, and basil to taste
To assemble:
200g sliced or grated mozzarella
4 tablespoons grated Parmesan cheese

Instructions:
Season the chicken with salt, pepper, garlic, and lemon. Let marinate for 15 minutes.
Bread the fillets:
Dip in flour, then in beaten egg, and finally in breadcrumbs.
Fry in hot oil until golden brown. Drain on paper towels.
Prepare the sauce:
In a pan, sauté the garlic and onion in olive oil.
Add the tomato sauce, season with salt, oregano, and basil. Cook for 5 to 10 minutes.
Assemble the dish:
In a baking dish, pour a little sauce on the bottom.
Arrange the breaded fillets, cover with more sauce.
Sprinkle the mozzarella on top and finish with the Parmesan.
Bake in a preheated oven at 200°C for about 15 minutes, or until the cheese is melted and golden brown.
