Light coconut, pineapple & lime ice cream
For: 4 persons
⏱️Prep time: 12 minutes (+3h freezing)
Ingredients (for 4 people)
Lightened coconut milk: 200 ml (fluid, pearly white)
Fresh pineapple: 200 g (cut into small cubes)
Lime (lime): 1 (zest + juice)
100 Natural yogurt 0%: 100 g (for texture, white)
Agave syrup: 1 c. for soup (or light honey, depending on taste)
Coconut slices: 1 c. soup (for decoration, optional)
Mint leaves: 4 (for decoration)

Very detailed preparation steps
1️⃣Cut the pineapple into small dices.
2️⃣ In a blender, put the pineapple, coconut milk, yogurt, juice and zest of lime, agave syrup.
3️⃣Mix until you get a very smooth and homogeneous mixture.
4️⃣ Pour in a large, flat container, place in the freezer for at least 3 hours. Stir with fork every 45 min to get a sorbet texture.
5️⃣ Serve in coconut half-shells, or in pretty bowls.
6️⃣ Parsem coconut flakes and garnish with mint leaves before serving.

Use frozen pineapple for quicker prep and an ultra-fresh effect when mixing.

Coconut milk can be substituted with almond milk for a different, softer flavor.
