Chocolate Cream Cake

Super moist, fluffy, and with an irresistible chocolate frosting. Perfect for any celebration or special treat.

Cake Ingredients

• 2 cups all-purpose flour
• 2 cups sugar
• ¾ cup unsweetened cocoa powder
• 2 tsp baking powder
• 1 ½ tsp baking soda
• 1 tsp salt
• 1 tsp espresso powder (enhances the chocolate flavor)
• 1 cup buttermilk, almond milk, or coconut milk
• ½ cup canola, vegetable, or melted coconut oil
• 2 large eggs
• 2 tsp vanilla extract
• 1 cup boiling water

Instructions

1️⃣ Oven Preparation
• Preheat oven to 350°F (175°C).
• Grease and flour two 9-inch (23 cm) round pans or use nonstick spray.

2️⃣ Dry Mixture
• In a large bowl or the bowl of a stand mixer, combine:
flour, sugar, cocoa, baking powder, baking soda, salt, and espresso powder.
• Mix well with a hand mixer or paddle attachment.

3️⃣ Wet Mixture
• Add to the dry ingredients:
milk, oil, eggs, and vanilla.
• Beat at medium speed until well combined.

4️⃣ Boiling Water
• Reduce speed and slowly add boiling water.
The mixture will be runny: this is normal! This ensures a very moist cake.

5️⃣ Baking
• Divide the mixture equally between the pans.  • Bake for 30–35 minutes, or until a toothpick comes out clean.
• Let cool for 10 minutes in the pan, then remove from the pan and let cool completely.
