Spinach, Cheese & Bacon Stuffed Chicken Breast
Ingredients:
✔️ 4 large chicken breasts
✔️ Salt & black pepper (to taste)
✔️ 2 tbsp olive oil
✔️ 1 cup fresh spinach, chopped
✔️ 1/2 cup cream cheese
✔️ 1/2 cup shredded mozzarella
✔️ 1/4 cup grated parmesan
✔️ 1/4 cup crispy bacon or chopped ham
✔️ 1 tsp garlic powder
✔️ 1 tsp onion powder
✔️ Fresh thyme sprigs (for garnish)

Instructions:
1. Prepare the Chicken:
– Preheat oven to 400°F (200°C).
– Cut a pocket into each chicken breast and season with salt & pepper.
2. Make the Filling:
– In a bowl, mix spinach, cream cheese, mozzarella, parmesan, bacon/ham, garlic powder, and onion powder until combined.
3. Stuff the Chicken:
– Fill each chicken breast pocket with the mixture, pressing it in firmly.
4. Cook the Chicken:
– Heat olive oil in an oven-safe skillet over medium-high heat.
– Sear chicken for 3-4 minutes per side until golden brown.
– Transfer to the oven and bake for 20-25 minutes until fully cooked.
