Homemade Dragonfruit Strawberry Ice Cream
Ingredients:
For the Ice Cream Base:
– 2 cups heavy whipping cream
– 1 cup whole milk (or coconut milk for dairy-free option)
– ¾ cup granulated sugar
– 1 tsp vanilla extract
For the Fruit Mixture:
– 1 cup fresh or frozen dragonfruit (pitaya), diced
– 1 cup fresh or frozen strawberries, hulled
– 1 tbsp lemon juice (enhances the fruit flavor)
Instructions:

Prepare the Fruit:
1. If using fresh dragonfruit, peel and dice it into small pieces. For frozen fruit, allow it to thaw for a few minutes before use.
2. Hull the strawberries and cut them into quarters.
3. In a blender or food processor, combine the dragonfruit, strawberries, and lemon juice. Blend until smooth and creamy.
Mix the Ice Cream Base:
1. In a large mixing bowl, combine the heavy whipping cream, whole milk, granulated sugar, and vanilla extract.
2. Whisk the ingredients together until the sugar is fully dissolved.
Combine the Fruit and Cream:
1. Pour the pureed dragonfruit and strawberry mixture into the bowl with the cream mixture.
2. Stir well until fully combined.
Chill the Mixture:
1. Pour the ice cream base into an airtight container and refrigerate for at least 2 hours, or until completely chilled.
Churn the Ice Cream:
1. Once the mixture is chilled, pour it into an ice cream maker and churn according to the manufacturer’s instructions, usually for about 20-25 minutes, until the ice cream has thickened and reached a soft-serve consistency.
Freeze and Serve:
1. Transfer the ice cream to a container and freeze for at least 3-4 hours, or until it firms up to your desired consistency.
2. Scoop and serve with fresh fruit on top if desired.
