Super Moist Chocolate Cake with Chocolate Ganache

Ingredients
For the Cake:
1¾ cups all-purpose flour
2 cups granulated sugar
¾ cup unsweetened cocoa powder
1½ tsp baking powder
1½ tsp baking soda
1 tsp salt
2 large eggs
1 cup whole milk
½ cup vegetable oil
2 tsp vanilla extract
1 cup boiling water
For the Ganache:
1 cup heavy cream
8 oz semisweet chocolate, chopped
2 tbsp unsalted butter
Instructions

1. Make the Cake:
Preheat oven to 350°F (175°C).
Grease and flour two 9-inch round cake pans or line with parchment paper.
In a large bowl, whisk together:
Flour
Sugar
Cocoa powder
Baking powder
Baking soda
Salt
Add eggs, milk, oil, and vanilla extract. Beat on medium speed for 2 minutes until smooth.
Gradually stir in boiling water (the batter will be thin — that’s good!).
Divide batter evenly between the pans and bake for 30–35 minutes, or until a toothpick inserted comes out clean.
Cool in pans for 10 minutes, then transfer to wire racks to cool completely.
2. Make the Ganache:
Heat the heavy cream in a small saucepan until it just begins to simmer — do not boil.
Pour the hot cream over the chopped semisweet chocolate in a heatproof bowl.
Let it sit for 2–3 minutes, then stir gently until smooth and glossy.
Add butter and stir until fully incorporated.
3. Assemble the Cake:
Place one cooled cake layer on a serving plate or cake stand.
Spread a generous layer of ganache over the top.
Add the second cake layer.
Pour the remaining ganache over the cake, letting it drip down the sides. Smooth with a spatula for a polished finish.
Notes:
Extra Moistness Tip: Brush cooled cake layers with simple syrup before assembling for added moisture.
Cool Before Ganache: Make sure cake is fully cooled to prevent melting the ganache.
Storage: Store covered at room temperature for 2 days or refrigerate for up to 5 days.
