Chocolate Mousse Cake

Sweet and easy is our recipe for this chocolate mousse cake: Moist chocolate bases are filled and coated with creamy chocolate mousse. Delicious!
INGREDIENTS
FOR THE CHOCOLATE BASE
120 g dark chocolate coating
100 g butter
3 egg whites (medium)
120 g sugar
3 egg yolks (medium)
80 g flour (type 405)
½ tsp baking powder
1 tbsp cocoa powder
FOR THE CHOCOLATE MUSSE
600 g heavy cream
250 g dark chocolate coating
4 egg yolks (medium)
120 g sugar
3 sheets of white gelatin
A little butter and powdered sugar for the pan

PREPARATION
Step 1
Preheat oven to 200°C (top and bottom heat) (convection oven: 180°C). Line a 26 cm springform pan with parchment paper. For the chocolate base, finely chop the chocolate coating and cut the butter into cubes. Melt both ingredients in a metal bowl over a bain-marie. Let cool slightly.
Step 2
Whisk the egg whites with sugar until stiff peaks form. Whisk the egg yolks with sugar until creamy. Add the chocolate coating mixture and stir in.
Step 3
Sift the flour with the baking powder and cocoa powder, add to the batter, and fold in the beaten egg whites by hand. Pour the batter into the pan and bake in the preheated oven for about 20 minutes. After baking, loosen the edges and let cool completely.
Step 4
For the chocolate mousse, whip the cream until stiff peaks form and refrigerate until ready to use. Soak the gelatin in cold water. Finely chop the chocolate coating and melt it over a bain-marie.
