Chocolate Ice Cream Sandwiches

Chocolate ice cream sandwiches are the perfect summer refreshment. This homemade vanilla ice cream made with sweetened condensed milk and whipped cream is super quick to make and is encased in a delicious chocolate cookie.

INGREDIENTS

FOR THE ICE CREAM

600g heavy cream
1 can sweetened condensed milk (400g each)
1 tbsp vanilla paste (alternatively: 1 tbsp vanilla extract)
1 tsp dark rum
½ tsp salt

FOR THE DOUGH

125g all-purpose flour (type 550)
60g cocoa powder
½ tsp espresso instant coffee
½ tsp salt
¼ tsp baking soda
100g brown sugar
60g maple syrup
60ml neutral cooking oil (e.g., sunflower oil)
30ml milk
1 egg (size M)
1 tsp vanilla extract

PREPARATION

Step 1
Grease a deep baking sheet (approx. 25cm x 30cm) with a little oil.  Line a baking sheet with plastic wrap, leaving an overhang on all sides. For the ice cream, combine the cream, sweetened condensed milk, vanilla paste, rum, and salt in a large bowl and beat with a stand mixer or hand mixer until stiff peaks form.

Step 2
Pour the mixture into the prepared pan and smooth the surface. Cover the ice cream with the plastic wrap overhang and freeze in the freezer for at least 6 hours.

Step 3
Preheat oven to 200°C (top/bottom heat: 180°C) (fan oven: 180°C). Grease a baking sheet (45 cm x 33 cm) with a little oil and line it with parchment paper. For the batter, sift the flour and cocoa powder into a bowl. Add the instant espresso powder, salt, and baking soda and mix everything together.

Step 4
In a separate bowl, whisk together the sugar, maple syrup, oil, milk, egg, and vanilla extract until smooth.  Mix in the flour mixture with a spatula until a smooth dough forms.
