Carrot and Orange Cake with Cream Cheese 🥕🍊
Ingredients:
For the sponge cake:
• 250 g wheat flour
• 200 g brown sugar
• 3 eggs
• 150 ml vegetable oil
• 200 g grated carrot
• 1 teaspoon ground cinnamon
• 1 teaspoon ground ginger
• Zest of 1 orange
• 1 teaspoon baking powder
• ½ teaspoon baking soda
• ½ teaspoon salt
For the cream cheese frosting:
• 250 g cream cheese
• 100 g icing sugar
• 100 g unsalted butter
• 1 teaspoon vanilla extract
• Orange zest for garnish

Preparation:
1️⃣ Preheat the oven to 175°C and grease two 20 cm baking pans.
2️⃣ Whisk the oil, brown sugar, and eggs until smooth.
3️⃣ Add the grated carrot and orange zest.
4️⃣ Sift the flour, cinnamon, ginger, baking powder, baking soda, and salt. Stir in gradually.
5️⃣ Pour the batter into the pans and bake for 35-40 minutes, or until a toothpick inserted comes out clean.
6️⃣ Let cool completely before decorating.
Cream Cheese Frosting:
7️⃣ Beat the butter with the powdered sugar until smooth.
8️⃣ Add the cream cheese and vanilla, and mix until creamy.
9️⃣ Cover the cake with the frosting and decorate with orange zest.
