Strawberry Cake
Ingredients
For the sponge cake:
• 200 g flour
• 1 tsp baking powder
• 8 egg yolks
• 6 egg whites
• 200 g sugar
• 1 tsp vanilla
• 50 g melted butter
• 1 jar (270 g) strawberry jam
For the meringue:
• 2 egg whites
• 250 g pureed strawberries
• 250 g sugar

Preparation
1️⃣ Prepare the oven:
Preheat to 180°C. Grease and flour a baking pan.
2️⃣ Sponge cake:
• Sift the flour with the baking powder.
• Beat the 6 egg whites until stiff and set aside.
• In another bowl, beat the egg yolks with the sugar until thickened.
• Add the flour mixture, vanilla, and melted butter, and finally fold in the beaten egg whites.
• Pour into the pan and bake for 30 to 40 minutes (until a toothpick inserted comes out clean).
• Let cool on a wire rack.
3️⃣ Meringue:
• Beat the 2 egg whites with the strawberry puree and half of the sugar.
• When stiff, add the remaining sugar little by little until you have a glossy meringue consistency.
4️⃣ Assembly:
• Cut the cake in half (horizontally).
• Fill with strawberry jam and top with the meringue.
