Strawberry and Blueberry Cheesecake
A smooth, creamy, and fruity dessert with a crispy base and a glossy berry topping.
Ingredients:
For the crust:
• 200g digestive biscuits
• 100g melted butter
For the filling:
• 500g cream cheese
• 200ml whipping cream
• 150g sugar
• 3 eggs
• 1 teaspoon vanilla extract
• 100g crushed strawberries
• 100g crushed blueberries
For the topping:
• 100g fresh strawberries
• 100g fresh blueberries
• 50g sugar

Preparation:
1️⃣ Crust:
• Crush the biscuits into a powder.
• Mix with the melted butter.
• Press the mixture into the base of a springform pan.
• Bake at 180°C for 10 minutes and let cool.
2️⃣ Filling:
• Beat the cream cheese and sugar until smooth.
• Add the eggs one by one, then the cream and vanilla.
• Stir in the crushed strawberries and blueberries.
• Pour over the cooled crust.
• Bake at 160°C for 50 minutes.
• Let cool in the off oven with the door ajar.
3️⃣ Topping:
• Cook the fruit with the sugar over medium heat until they release their juices and soften (about 8-10 minutes).
• Let cool completely.
• Place on top of the cooled cheesecake.
Refrigerate at least 4 hours (or overnight) before serving.
Result: A cheesecake with a balanced flavor, a perfect blend of sweetness, creaminess, and the acidity of the berries.
