Zucchini Lasagna Rolls

Ingredients
2 large zucchinis (sliced lengthwise into thin strips)
1 cup ricotta cheese
½ cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
1 egg
1 tsp Italian seasoning
½ tsp salt & ½ tsp black pepper
1 cup marinara sauce
1 tbsp olive oil
Fresh basil (for garnish)

Instructions
1️⃣ Prep Zucchini: Preheat oven to 375°F (190°C). Lightly salt zucchini slices & let sit 10 min to remove excess moisture. Pat dry.
2️⃣ Make Filling: Mix ricotta, mozzarella, Parmesan, egg, Italian seasoning, salt & pepper.
3️⃣ Assemble Rolls: Spread 1 tbsp filling on each zucchini slice, roll up & place in a greased baking dish.
4️⃣ Bake: Pour marinara sauce over rolls, drizzle with olive oil & bake 25 min until bubbly.
5️⃣ Serve: Garnish with basil & enjoy!
