INGREDIENTS
FOR THE DOUGH
110 g dark chocolate
90 g butter
3 tbsp oil
2 medium eggs
150 g sugar
90 g flour (type 405)
35 g cocoa powder
1 tsp baking powder
1 tsp baking soda
150 g sour cream
A little butter for the pan
A little flour for the pan
FOR THE CREAM
250 g mascarpone
2 packets vanilla sugar
3 tbsp cream
FOR THE DECORATION
100 g dark chocolate coating

PREPARATION
Step 1
Grease a 20 cm springform pan and lightly dust with flour. Preheat oven to 180°C (350°F) top/bottom heat (160°C fan/convection oven). Melt the chocolate with the butter and oil over a pan of simmering water and let cool slightly. In a mixing bowl, beat the eggs and sugar until frothy. Add the chocolate mixture to the egg mixture and mix well.
Step 2
Mix and sift the dry ingredients together. Add to the egg mixture and mix everything together. Finally, add the sour cream. Pour the cake batter into the pan and bake in the preheated oven for about 35 minutes. Let the chocolate cake cool and cut it in half.
Step 3
For the cream, beat the mascarpone with the vanilla sugar and cream until smooth. Spread the cream on the bottom cake layer and gently press the cake lid on. Refrigerate the cake for 2 hours.
Step 4
Melt the dark chocolate coating in a double boiler and spread generously over the cake.
