Apple slices

The juicy apple filling with vanilla custard is covered in a delicate shortcrust pastry. Super delicious!

INGREDIENTS (for 24 pieces)

FOR THE SHORTCrust PASTRY
400 g plain flour (type 405)
1 packet baking powder
100 g sugar
1 pinch of cinnamon
250 g butter
2 medium eggs
2 tablespoons milk
A little butter for the pan
A little flour for the pan

FOR THE APPLE FILLING

5 large apples (1 kg, e.g., Boskop)
75 g brown sugar
2 packets vanilla pudding powder
1 pinch of cinnamon
2 tablespoons rum

ALSO

1 medium egg yolk
A little powdered sugar for dusting

PREPARATION

Step 1
Grease a baking sheet (30 x 40 cm) with butter and lightly dust with flour. For the shortcrust pastry, mix the flour, baking powder, and sugar.  Add butter in small pieces and cinnamon. Begin to knead everything into a dough, then add the eggs and milk. Knead the dough again briefly with your hands, flatten it, and refrigerate for 1 hour.

Step 2
For the apple filling, wash, peel, core, and roughly slice the apples. Mix with the sugar and pudding mix. Add the cinnamon and rum. Heat in a saucepan over medium heat, stirring constantly, for about 5 minutes; the mixture should have a slight sheen. Preheat oven to 180°C (350°F) top/bottom heat (160°C fan/convection oven).

Step 3
Divide the dough in half, roll out the first half into a rectangle (30 x 40 cm) and place it in the baking sheet. Prick the dough base several times with a fork. Pour the apple filling into the base and spread it evenly.

Step 4
Roll out the second half of the dough into a rectangle (30 x 40 cm) and place it on top of the filling.  Whisk the egg yolk and brush it over the top of the cake. Bake in the preheated oven for about 40 minutes until golden brown.

Step 5
After baking, let it cool thoroughly. Cut the cake into 24 slices and dust with powdered sugar, if desired. Serve the apple slices immediately.
