Birthday Chocolat Cake
Birthday cake for a colleague, a hazelnut fan:

🔸Milk chocolate mousse

HAZELNUT CREME RECIPE
150g whole roasted hazelnuts
40g whole milk
140g full-fat single cream
50g sugar
2.4g gelatin
Blend the hazelnuts to form a pasty powder
Add the milk.
Heat the cream and dissolve the hydrated, then squeezed, gelatin in it.
Pour over the hazelnut-milk mixture. Mix, pour into a plastic-lined ring, and freeze for at least 4 hours.
