Stracciatella cake

Stracciatella cake is so delicious. We love the fluffy chocolate sponge cake combined with the mascarpone cream. This cake is guaranteed to delight everyone.

INGREDIENTS

FOR THE DOUGH

50 g dark chocolate
5 eggs (size M)
150 g sugar
1 pinch of salt
80 g wheat flour (type 405)
2 tbsp baking cocoa
1 tsp baking powder

FOR THE FILLING

100 g dark chocolate
250 g mascarpone
250 g low-fat quark
80 g sugar
1 vanilla pod (alternatively: 1 tbsp vanilla extract)
500 g cream
2 packs of cream stiffener

PREPARATION

Step 1
Preheat the oven to 180 degrees top/bottom heat (fan oven: 160 degrees). Line the bottom of a springform pan (Ø 26 cm) with baking paper. For the dough, finely chop the chocolate with a sharp knife and melt it in a bowl over a hot water bath.  Beat the eggs, sugar and salt with the whisk of a hand mixer for 5 minutes on the highest setting until frothy.

2nd step
Mix the flour, cocoa and baking powder and quickly fold into the egg mixture. Stir in the liquid chocolate coating. Pour the dough into the prepared tin and bake in the preheated oven for approx. 35 minutes. Allow the cake to cool completely on a rack.

3rd step
For the filling, chop the chocolate coating very finely. Set aside 1 tablespoon for garnishing. Stir the mascarpone, quark and sugar until smooth. Cut the vanilla pod lengthways and scrape out the pulp with the blunt side of a knife. Stir the vanilla pulp and chopped chocolate coating into the cream.

4th step
Whip the cream until stiff, adding the whipped cream strips. Fill 4 tablespoons of cream into a piping bag with a star nozzle and set aside for garnishing. Fold the remaining cream into the stracciatella cream.
