Pineapple Kiwi Salad 🥝🍍
This refreshing tropical fruit salad is packed with juicy pineapple, tangy kiwi, fresh mint, and a zesty lime-honey dressing—all topped with lightly toasted coconut for a delicious crunch. Perfect for summer gatherings or a light, healthy treat!
Ingredients:
¼ cup shredded coconut
1 large fresh pineapple, cubed
4 kiwis, peeled and sliced
8-10 fresh mint leaves, thinly sliced (julienned)
2 limes, zested and juiced
2 tablespoons honey
Directions:

1️⃣ Toast the Coconut:
In a skillet over medium-low heat, add shredded coconut.
Stir frequently and toast until lightly browned (about 3-5 minutes).
Remove from heat and set aside.
2️⃣ Prepare the Fruit:
Cube the pineapple and place it in a large bowl.
Slice each kiwi in half, scoop out the fruit, and cut into bite-sized pieces.
Thinly slice (julienne) the mint leaves and add to the bowl.
3️⃣ Make the Dressing:
In a small bowl, combine lime zest, lime juice, and honey.
Whisk until smooth, then pour over the fruit and toss to coat.
4️⃣ Chill & Serve:
Cover and refrigerate until ready to serve.
Just before serving, sprinkle with toasted coconut.
