This cheesecake is a chocolate lover’s dream, with a smooth texture and deep flavor. Perfect to serve chilled and enjoy every bite!
Ingredients
For the base:
✅ 150 g vanilla cookies
✅ 50 g melted butter
✅ 1 tablespoon sugar
✅ 2 tablespoons bittersweet cocoa
For the filling:
✅ 400 g semi-sweet chocolate
✅ 300 g cream cheese
✅ 45 g sugar
✅ 2 tablespoons liquid coffee
✅ 350 g heavy cream

Instructions
1️⃣ Prepare the base:
• Crush the cookies (they don’t need (be finely ground).
• Add the cocoa powder and melted butter, mix with a fork.
• Press the mixture into a 20cm springform pan and refrigerate while you prepare the filling.
2️⃣ Melt the chocolate:
• Chop and melt the chocolate in the microwave at 30 second intervals or in a bain-marie.
• Allow to cool slightly before using.
3️⃣ Prepare the cream:
• Beat the cream cheese with the sugar and coffee until creamy.
• Add the warm melted chocolate and fold in well with a spatula.
4️⃣ Fold in the whipped cream:
• Beat the heavy cream until it has a firm consistency.
• Gently fold into the chocolate mixture using folding movements.
5️⃣ Assemble the cheesecake:
• Pour the mixture over the cookie base and smooth with a spatula.
• Cover with cling film and refrigerate for 4-6 hours (ideally overnight).
6️⃣ Decorate and enjoy:
• Before serving, decorate with grated chocolate, cocoa powder or chocolate pieces.
