Quark plait
With recipe 📌
Quark plait like from the bakery is really easy with this recipe. The dough bakes in the oven until it is juicy and fluffy. The powdered sugar glaze rounds off the plait perfectly.
INGREDIENTS
FOR THE DOUGH
50 ml milk
500 g wheat flour (type 405)
½ cube of fresh yeast (approx. 20 g)
100 g butter
60 g sugar
1 pinch of salt
250 g quark (20% fat)
2 eggs (size M)
FOR THE GLAZE
100 g powdered sugar
2 tbsp lemon juice
ALSO
some butter for the mold
PREPARATION
Step 1
For the dough, heat the milk to lukewarm. Put the flour in a bowl and make a well in the middle. Crumble in the fresh yeast and pour in the milk. Mix gently with a fork so that the yeast dissolves in the milk. Put the butter in pieces on the edge of the flour, add the sugar and a pinch of salt.
Step 2
Add the quark and eggs and knead everything into a smooth dough, first for about 5 minutes on a low setting, then about 5 minutes on a high setting. Cover the dough and let it rise in a warm place for about 30 minutes, then divide it into 3 parts. Grease a loaf pan (25 cm).
Step 3
Form each piece of dough into a 40 cm long dough strand. Braid the 3 dough strands into a plait. Place the plait in the springform pan and cover again and let it rise for about 30 minutes. Preheat the oven to 180 degrees top/bottom heat (fan oven: 160 degrees) and bake the quark plait in it for about 30 minutes. Step 4
Let the quark braid cool completely on a cake rack. For the icing, sift the powdered sugar into a bowl and mix with lemon juice. Sprinkle the plait with the icing and serve.
