Millionaires Shortbread

You have to try Millionaires Shortbread: The juicy slices of shortcrust pastry are covered in caramel and chocolate.  Everyone will want this recipe.

INGREDIENTS

FOR THE DOUGH

125 g wheat flour (type 405)
1 tsp baking powder
1 pinch of salt
30 g sugar
90 g cold butter
a little butter for the mold

FOR THE CARAMEL

100 g butter
50 g sugar
50 g brown sugar (preferably fine, e.g. muscovado)
200 g sweetened condensed milk
5 g salt (optional for salted caramel)

FOR THE CHOCOLATE GLAZE

100 g dark chocolate
1 tbsp butter
½ tsp salt flakes (optional, for sprinkling)

PREPARATION

Step 1
Grease a small baking tray (approx. 23 x 28 cm) with butter. Place a strip of baking paper in it and press it down. Preheat the oven to 180 degrees circulating air (200 degrees top/bottom heat).

2nd step
For the dough, mix the flour, baking powder, salt and sugar. Add the cold butter in flakes and knead everything into a dough with your hands. This takes a moment, the mixture will seem dry at the beginning, just keep kneading.

3rd step
Spread the dough in crumbs evenly in the prepared tin and press down. Prick the dough several times with a fork so that the dough does not swell up too much when baking. Bake in the hot oven for about 12 minutes until golden brown, then let cool.

4th step
In the meantime, for the caramel, put the butter in a saucepan and let it melt. Add the sugar, brown sugar and salt to taste and stir over medium heat until the sugar has completely dissolved and a uniform, brown mass is formed. Add the condensed milk while stirring constantly. Let the caramel continue to caramelize for another 3-5 minutes while stirring.
